Walk-On's Sports Bistreaux is rolling out a purpose-built next-generation restaurant prototype that cuts its traditional footprint roughly in half while embedding dedicated third-party delivery infrastructure and upgraded kitchen equipment — signaling how the 80-plus-unit sports-bar chain is engineering its physical format around modern digital ordering demands.
The new model, designed by Madrid-based firm Livit, targets a 3,500- to 4,500-square-foot footprint versus the brand's legacy 7,000- to 8,000-plus-square-foot format. The first purpose-built unit will open on Perkins Road in Baton Rouge in early 2027, spanning approximately 3,688 square feet with seating for 125 guests. Walk-On's Sports Bistreaux confirmed the design was informed by operational learnings from its existing 3,700-square-foot inline location at The Battery Atlanta, which proved the brand could deliver its full menu and sports-bar experience in a compact format.
Delivery and Kitchen Tech
From an operations standpoint, the prototype's most commercially significant feature is a dedicated third-party delivery pickup zone — cubbies positioned near the host stand to receive Uber Eats, DoorDash, and other platform orders without disrupting dining-room flow. As off-premises sales continue to expand across full-service casual dining, integrating physical pickup infrastructure at the design stage reduces friction for both delivery couriers and in-house staff, a challenge that has plagued operators who retrofitted delivery workflows into legacy floorplans.
The kitchen overhaul is equally targeted at throughput and consistency. New equipment including clamshell grills is designed to simplify training, reduce ticket times, and maintain Walk-On's scratch-made menu output at smaller scale. For a franchise system, standardizing equipment packages directly affects franchisee labor costs, new-hire onboarding speed, and cross-location menu consistency — all core concerns in any labor-management conversation. The A/V package also gets a material upgrade, anchored by a large-scale TV wall and enhanced audio-visual system that keeps sports viewing the dominant guest experience.
The Franchise Flexibility Play
Rather than mandating a single layout, Walk-On's is framing the prototype as a modular "kit of parts" — a flexible design framework that allows franchisees to select or layer in elements such as a peninsula-style bar configuration, a flexible lounge zone, outdoor patio TV walls, and localized community design elements based on their specific market and site. That approach lowers the barrier to entry for franchisees who might struggle to secure larger footprints in dense urban or suburban inline locations, which is increasingly where fast-casual and casual-dining growth is concentrating.
"The new design gives our franchisees more flexibility in where and how they build, while keeping the energy, hospitality and community connection our guests know and love," said Brandon Landry, CEO and co-founder of Walk-On's Sports Bistreaux.
The host stand doubles as a brand merchandise station, and localized wall elements — area high schools, athletes, jerseys — give each unit a distinct community identity, a design strategy increasingly used by multi-unit operators to drive repeat visits and local brand affinity without requiring bespoke construction budgets.
For the broader casual-dining and sports-bar segment, the Walk-On's prototype is a visible data point in the industry-wide recalibration toward smaller, operationally leaner restaurant formats that treat off-premises digital ordering as a core design input rather than an afterthought.
